Writing can come from pretty much any project. What you're describing is something one of the mods is doing—using writing prompts to keep a daily writing habit alive, some of which will be developed into stories and some of which will be abandoned words, but all of which count toward a word count goal (or time which would count toward a habit goal).
The reflections and stream of consciousness, you might pause and consider the purpose. If those turn into writings that are more like your personal diary, we ask not to count those, but if you're writing the diary of a character, that's something that would count because it's fictional creation. (There is a thin line to everything in our countable words guidelines that settles on the fact that all words counted are via the honor system.)
